Teaching Children Life Lessons Through Gardening
My children enjoy working in the garden. They like to plant seeds and then watch them grow into sunflowers, tomatoes, peaches, and even pears. It is something they have grown up with. They watched their grandfather plant his vegetable garden and their grandmother her flowers and when they were old enough, they were allowed to help. They enjoy seeing the fruits of their labor and eating the delicious fruit grown on the trees on the family farm.
Overturn two different sizes of terra-cotta pots, stacking them in the garden. (A 12-inch pot atop a 16-inch pot works well.)
Set saucer atop containers. Fill the basin with water to attract birds.
Ingredients: 2 lbs. kidney beans
4 slices chopped bacon or 1/2 lb. piece of salt pork
2 green plantains, finely chopped
1 T. salt
1 T. cooking oil
4 small tomatoes, peeled and chopped
2 onions, chopped
1 clove garlic, minced
Directions:
Wash the beans and let soak overnight. Put beans and bacon or salt pork in a pressure cooker with enough water to cover. Cook for about an hour or until tender. Ad the plantains and cook until they are soft. Add the salt and mix well. Apart, sauté the tomatoes, onions and garlic until soft; then add to the beans. Cook another half an hour until all flavors are absorbed. These beans are even better the day after.

Amber’s Garden produces Ready-to-Plant vegetable gardens, perfect for beginning gardeners —- particularly children. There are seven varieties: Salad, Herb Summer Crop, Sunflower, Gourd, Pumpkin and Salsa. The gardens were created to take the guess work out of seed spacing and depth; the seed are pre-spaced on seed mat that range in size from 18-inch-diameter cicular mats to 6-foot-long seed beds. Amber’s Garden is a fun and fool-proof first step toward teaching children about the rewards of gardening and nature. http://ambersgarden.com
